  Cabo Lime Chicken Sandwiches

Ingredients:
Flatten Some boneless, skinless chicken breasts
1 cup Lime juice OR less depending on how much chicken you are cooking
½ Onion, minced
1 red Bell pepper
1 Tbl. Olive oil
Some Cami's Classic Guacomole Dip (see recipe in Healthy Eating)
Some Monterey jack cheese
Instructions:
Flatten some boneless, skinless chicken breasts. Mix lime juice and onion in a plastic bag. Add the chicken and marinate for an hour or more in the fridge. In a large skillet heat 1 Tbl. olive oil then add chicken with some of the lime juice marinade. When meat is almost done, top with some strips of red bell pepper and a slice of Monterey jack cheese on top. Cover with a lid and cook until chicken is cooked through and cheese is melted. Serve on a whole wheat ciabato roll or some other rustic roll with mayonnaise or miracle whip (less calories!). Can garnish with some fresh cilantro.
