Ingredients:
1 can Chunk Light Tuna - in water
1/2 cup grated Parmesan cheese*
1/2 tsp Emeril's Original Essence Spice**
1/4 tsp fresh ground black pepper
2 Tbsp Miracle Whip Light
4 leaves Romain lettuce
10 large leaves spinach
4 slices whole wheat bread
Instructions:
Drain tuna in can.

Shred lettuce and spinach into 1/8" strips

Combine all ingredients in a medium bowl.

Divide the mixture between two pieces of bread and place tops on.

Makes 2 sandwiches.

Dietary Exchange:
Makes 2 Servings.
Each serving includes:
2 carbohydrates (bread)
1 dairy (cheese)
1 vegetable (lettuce & spinach)
1 protein (tuna)

Variations:
You may substitute chicken or turkey if you are not fond of the tuna. This recipe makes the tuna taste like a chicken sandwich with all of the healthy contributions of a fish.
Mayonnaise or Miracle Whip can be substituted with a yogurt and olive oil mixture.

*Parmesan cheese that is from a can will not work. Use fresh grated or replace with mozzarella cheese.
