Ingredients:
1 whole egg
5 egg yolks
1 c finely grated Parmigiano Reggiano (not Kraft, the real stuff)
1 c finely grated Pecorino Romano
1 tsp course ground black pepper
1 lb rigatoni
1 lb thick sliced bacon
Instructions:
Slice the thick bacon into 1/2" strips the short way so you have pieces approximately 1" x 1/2" x 1/4". Cook the bacon in a large skillet until it is browned, not crispy. Remove the bacon and set aside. Dab out most of the grease, leaving only about 1 TBSP and the brown bits.
Bring 4 quarts of water to boil in a large pot. Add 2 TBSP salt. Add pasta and cook uncovered for 10-12 min, stir occasionally.
While the pasta is cooking, combine in a bowl the whole egg, 5 yolks, and the pepper. Whisk in both types of cheeses.
As the pasta finishes cooking, add 1/2 cup of the water from the pasta to the bacon skillet. Bring the skillet to boil, scraping up all browned bacon seasoning. When the pasta is done cooking (al dente), drain the water by pouring it into a colander and immediately place the drained pasta from the colander into the simmering skillet. Toss the pasta in the hot liquid for one minute. Turn off the heat to the skillet and immediately add the egg and cheese mixture. Stir until the cheese melts and the sauce becomes creamy. (If you get any omelet forming on the bottom of the pan, then you didn't have enough water or the pan was still too hot and should be removed from the burner.)
Plate and serve the pasta. Optionally add additional Pecorino Romano grated on top and/or course ground black pepper.

Cheese ratios: vary the ratio between the Pecorino and Parmigiano to your preference. 100% Pecorino is strong with a unique taste.
