Ingredients:
1 cup creamy peanut butter
1 ½ cups powdered sugar
½ cup unsalted butter, softened
1 teaspoon vanilla extract
1-2 cups chocolate chips (for melting)
Optional: crushed graham crackers, chopped nuts, shredded coconut, cocoa powder, etc., for coating or mixing into the peanut butter mixture.
Instructions:
1. Mix the Peanut Butter Mixture:
-In a large mixing bowl, combine the creamy peanut butter, softened unsalted butter, and vanilla extract. Mix them well until they’re smooth and well combined.
-Gradually add the powdered sugar to the mixture. You might want to add it in smaller batches to avoid making a mess. Mix until everything is evenly incorporated and the mixture forms a dough-like consistency. If you’re adding any optional ingredients like crushed graham crackers, chopped nuts, or shredded coconut, you can mix them in at this stage.
2. Shape the Peanut Butter Balls:
Once the mixture is well combined, take small portions of it and roll them between your palms to form small balls. The size is up to you, but usually, they’re about 1 inch in diameter. Place the balls on a baking sheet lined with parchment paper.
Chill the Peanut Butter Balls:
Place the baking sheet with the peanut butter balls in the refrigerator for about 20-30 minutes. Chilling them will help them firm up, making them easier to handle when you dip them in chocolate.
3. Melt the Chocolate:
While the peanut butter balls are chilling, melt the chocolate chips. You can do this using a double boiler or by microwaving the chocolate in short bursts, stirring between each burst until it’s smooth and melted.
4. Coat the Peanut Butter Balls:
Take each chilled peanut butter ball and dip it into the melted chocolate using a fork or a dipping tool. Make sure to coat it completely. Allow any excess chocolate to drip off.
5. Set and Store:
Place the chocolate-coated peanut butter balls back onto the parchment-lined baking sheet. If you’re adding any additional toppings like chopped nuts or cocoa powder, sprinkle them on top while the chocolate is still wet.
Once all the balls are coated, place the baking sheet back in the refrigerator to allow the chocolate to set. This will take about 1-2 hours.
6. Serve and Enjoy:
Once the chocolate is set, your Peanut Butter Balls are ready to be enjoyed! They can be stored in an airtight container in the refrigerator for several days.
