Ingredients:
4 cups cooked brown rice
3 eggs
1 med. bell pepper diced (I have also used broccoli and carrots)
1 medium onion diced
2 cups mozzerella cheese
Instructions:
Spray non stick pan with Pam.
Saute bell peppper and onion
Scramble into the veggies the eggs
Add the cooked brown rice and mix all together. (If the rice is cold add 1/2 cup water and put a lid on then steam at low for about 5 minutes to heat up the rice.)
Turn off the heat. Sprinkle the Mozzerella cheese over the top. Replace lid and let the cheese melt. This meal is ready in 15 minutes if the rice is cooked.
