Ingredients:
Flat Brisket (trimmed)
Favorite Rub
Course Kosher Salt
Black Pepper
Olive Oil

Use 2:1:1 ratio to mix rub, salt and pepper

Hardwood soaked in water
Smoker
Thermometers
Instructions:
Coat meat in olive oil. Mix Rub, Salt, Pepper and apply to all sides of the trimmed meat. Let sit for about 1 hour before placing in smoker.

Heat Smoker to 250 and add brisket. Total cook time for half flat brisket will be about 6 hours.

Add more soaked hardwood during the first 4 hours as needed.

When meat reaches 150, use Texas Crutch method (wrap in foil) until desired temperature.

Remove from smoker at 195 deg. Wrap and let set for 30 minutes. Internal meat temp should each 200.
