Ingredients:
2 1/4 c milk (warm 2 min in microwave)
1 1/2 tsp sugar
3/4 tsp yeast
1 1/2 tsp salt
5-6 c flour (3 wheat, 3 white)

2 T melted butter
Instructions:
Warm milk in microwave 2 min on high (110 deg). Add yeast and sugar and let sit or 5 min to cultivate the yeast.

Place mixture in mixing bowl. Add salt and some of the flour. Mix well to combine. Gradually add flour until a soft dough is formed.

Kneed the dough thoroughly by hand or mixer (3-5 minutes).

Place dough in a lightly greased bowl and let rest at room temperature, covered lightly with greased plastic wrap, for about 2 hours.

Divide dough into equal pieces and let rest for 30 minutes. Preheat oven to 500 (with pizza stone) or griddle to 375-400.

Roll each piece into 6-8" circles and cook. Flip over if using a griddle. When done, remove from heat and brush lightly with butter.
