Instructions
Start a large pot of water on the stove to boil.
Dice the peppers into 3/4" squares
Dice the onion into 1/2" squares
Cut the 4 sausages lengthwise then slice 1/4" thick
In a large skillet heat the 3 T of olive oil on med high heat and add the onions. Once the onions begin to cook, add the peppers. Once the onions and peppers are close to cooked, add the sausage pieces. Mix occasionally to get the sausages browned.
The pasta should take about 10 minutes to cook. Once the water in your large pot is boiling, add the penne pasta to the water and leave uncovered.
While the pasta is cooking, add the heavy whipping cream to the onions, peppers and sausage mixture. Reduce the heat and let it simmer stirring occasionally. Make sure you don't let the cream burn. Add salt and pepper to taste.
When the pasta is "al dente" drain the pasta but do not rinse it. Place the pasta in a large bowl and dump the sauce on top. Mix well and serve.
Variations:
Try Shell Pasta
Add cooked shrimp with the sausage
Cut the sausages lengthwise twice for 1/4 round instead of semi circles for smaller bites
